La Vendemmia: l’apice del “nostro” lavoro
La raccolta dell’uva presso l’azienda agricola Al Canevon avviene esclusivamente a mano. Si tratta di un’attività curata e attenta in tutte le sue fasi. Raccogliere l’uva a mano non significa semplicemente tradizione ma soprattutto selezione. Un metodo che contraddistingue Al Canevon e che ha sempre fatto la differenza.
Avviene poi una selezione durante la prima pigiatura, in cui viene separato il primo fiore, che verrà utilizzato per produrre il DOCG, selezione fondamentale e necessaria per gli obbiettivi enologici dell’azienda. The grapes are harvested at the Al Canevon farm exclusively by hand. It is a careful activity in all its phases. Picking grapes by hand does not simply mean tradition but above all selection. A method that distinguishes Al Canevon and that has always made a difference.
Then there is a selection during the first pressing, in which the first must is separated, which will be used to produce the DOCG, a fundamental and necessary selection for the winery’s enological objectives. It is a meticulous and hard work that gives great satisfaction and gives life to quality wines.
